Giant Waffles with Spiced Whipped Wescobee Honey Butter
Makes 12 small or 6 giant waffles.

| 2 eggs separated |
| 2 tsps caster sugar |
| 1½ cup buttermilk |
| 1 tsp vanilla essence |
| Pinch of salt |
| 300g or 2 cups self-raising flour with a pinch of baking powder |
| 3 tsp vegetable oil |
| Butter Ingredients |

| 150g soft butter |
| 3 tblsp Wescobee honey |
| ½ teaspoon cinnamon |
| Pinch of nutmeg |
| Waffles Method |

| Beat egg yolks and sugar until fluffy. |
| Add buttermilk and vanilla, mix well. |
| Sift flour into a large mixing bowl, add salt and stir in oil. |
| Beat in egg mixture into flour until a smooth batter appears. |
| Beat warm egg whites with a pinch of cream of tartar. |
| Fold egg whites into batter mixture and allow to stand for 10 minutes. |
| Use one cup of batter per waffle in a hot non-stick sandwich griller. |
| Cook each waffle for 6 minutes or until crispy |
| Butter Method |

| Beat butter until soft and whipped to a pale creamy texture. |
| Meanwhile as you’re whipping, slowly drizzle in the honey and spices until well incorporated. |
Serve over hot waffles with chopped fresh fruit.
